BACK TO NORMAL

Well, it's been a few days and I tell you, I think I have had my share of jelly beans and poptarts.
Never really realized how sluggish sugar can make you feel.  I much prefer my granola or whole grain muffins to poptarts for breakfast.  I still am using coconut milk for my coffee instead of coffeemate, I really do like the flavor, sprinkled with a little cinnamon....DELICIOUS!  It may be time for another cup pretty soon ;)
I believe there was a reason I chose to do this challenge.  I thought I was pretty healthy before but I now realize I wasn't as healthy as I could have been and feel sooo much better for it now!
I have more energy, my skin feels good and smooth and less dry, and I feel good about putting better things in my body. 
I am continuing to go to health food/farmers market stores and buying healthier products for our household which everyone, including the kids, really likes!

DAY 46 CHALLENGE

Well, the time has come.....less than 1 day to go and you know, I'm not even that excited about it......don't get me wrong, I will definitely be having my jelly beans and other yummy Easter treats but I looking back, I really didn't miss them all THAT much

I have been baking and food prepping all day for our Easter Brunch tomorrow and the temptation was definitely there but I can wait until tomorrow....I've hung in this far!

This has been an interesting journey and I never thought that I would want to continue this lifestyle but I think I do.  I love the good feeling I get when I put healthy fuel into my body and the healthier and stronger I feel in doing so!

DAY 44 CHALLENGE

I am running out of a lot of my "whole" foods again.  I think it's because the challenge is almost over and I haven't replenished my supplies because my brain is already thinking "I don't have to do this anymore" however I am missing my "whole" foods and am going to need to stock up for even when the challenge is over.  I feel so good about myself that I am going to continue a lot of what I am doing now.

Sometimes, there is nothing better than the taste of a very ripe banana or an almost black cherry that is so juicy and sweet, that I crave nothing else.  Fresh produce is so delicious I don't know why I didn't notice it as much before.

For dinner, my whole family "enjoyed" a whole grain pasta dinner with salad and whole wheat sourdough bread spread with real butter.  The pasta was baked in the oven with a homemade white sauce with herbs, cheese, and topped with toasted nuts and olive oil....almost everyone had seconds...there are no leftovers tonight!  Love it when that happens.......last Friday and Saturday coming up.....until then....

DAY 43 CHALLENGE

Why did I buy Easter candy already?  It's just staring me in the face and I still have 4 more days to go!

I never knew how good radishes are and how low in calories.....1- calories per radish depending on size.  I tried it sliced atop buttered whole wheat sourdough bread sprinkled with salt and pepper....DELICIOUS....another successful "whole" food!

For dinner, I had portabello burgers....so yummy!  Even if you are not a vegetarian, you will love this "meat" alternative.....portabellos are so meaty and hearty that you won't miss the beef at all! 
I baked mine in the oven drizzled with olive oil, salt, and pepper and topped with shredded cheese and then put them on multigrain sandwich thin bread (100 calories per bun).  Add lettuce, red onions, and tomatoes for add ons.....one of the BEST "whole" dinners I have made so far........

DAY 42 CHALLENGE

Less than 1 week to go.....I can't believe it's almost here....don't know what I'll do...I guess I will just have to wait and see!

I am feeling better than I have felt since before I started this challenge and am hoping I will continue to feel this good after the challenge.  I plan on sticking to "whole" foods as much as possible but on a less strict scale so I hope to still feel good inside and out!

I roasted some chickpeas today....they almost taste like nuts....such a yummy, healthy, inexpensive snack!

Winco carries my "Jumbo" raisin medley that I love for a fraction of the price at Sprouts....I am SO happy!

DAY 40 CHALLENGE

I made it to 40 days...yeah.....but the challenge is actually 47 days.....Lent is 40 days and then Holy Week which is another 7 days.....didn't really realize this but that's ok....what's one more week now!

My willpower was heavily tested this weekend:

Saturday, we celebrated my husband's birthday and his mom and sister got him a cake from Safeway topped with a THICK layering of buttercream frosting (my FAVORITE). 
Sunday, we went to John's Incredible Pizza for dinner and I was tempted with the BEST mini sugar donuts and mini iced cinnamon rolls I have tasted.  I am proud to say that I passed up on ALL of these temptations and stayed "true" to my challenge  :)   Yeah me  ;)   The devil cannot break me!

DAY 38 CHALLENGE

1 more week to go!

This has definitely been the hardest sacrifice I have made for Lent but it wasn't nearly as difficult as I thought it would be.  It definitely made me realize what I put in my body and what I SHOULDN'T put in my body anymore!

I definitely will no longer buy soda as a staple in our house (not even diet)
definitely going to eat healthier breakfasts and lay off the poptarts ;)
going to stop buying candy to refill the candy dishes when they are empty and only buy for special occasions

I like the way I feel and want to continue to feel good about what I put into my body.  Definitely did not see this as becoming a sort of "way of life" for me but things happen for a reason and opportunities present themselves in different ways when we least expect them.

I made more whole wheat/rice flour muffins in carrot/nut, dark chocolate cranberry, and honey mixed berry....sooo good, and once again, kids loved them too! If you make certain changes and swap out unhealthy ingredients for healthy ingredients, your family may never know and you will all be happier for it!

Tostadas were on the menu tonight with homemade corn tortillas very lightly fried with shredded cheese, curtido, and fresh sauteed green beans and OF COURSE, my favorite (and my family's too now) whole grain tortilla chips.

DAY 36 CHALLENGE

wow....is it almost 40 days already!
Time really is going by fast!

I can't believe I haven't had a poptart, jellybean, or diet soday in 36 days.....to tell you the truth, I don't really miss it all that much anymore!

Plantain chips are gone AGAIN, but still have plenty of granola for now so I'm good!

For dinner, my daughter made her "homemade" quesadillas from scratch using corn flour so I could have some....they tasted just as good as her "white flour" version!  I made homemade guacamole and curtido (cabbage salad) to go along with it.  Such a yummy dinner tonight where the whole family was involved.....LOVE THAT!

DAY 35 CHALLENGE

Well, I definitely have STRONG will power!

Went to the movies today and resisted the candy and my favorite......BUTTERY POPCORN for the second time since I started my challenge!  My boys were eating right in front of me and I resisted the entire time.....for 2 1/2 "whole" hours ;)
Instead, I popped some popcorn myself and added a little salt, pepper, olive oil, apple pie spice, and added peanuts and cranberries for my snack.  It was filling, tasted good (definitely not as good as movie theater), and made the lack of movie theater popcorn very tolerable.

Stuffed peppers is on the menu tonight......I just LOVE those guys!

DAY 34 CHALLENGE

It feels like I have been eating "whole" my whole life ;) .....pun intended...

It feels just so normal to me now.

Made more homemade plantain chips with olive oil, sea salt, and pepper....yum!

Family is definitely eating more fresh veggies and we are trying new ones as much as we can.  Who knew that fresh radishes seasoned with salt and pepper could taste so good.

I am loving baked sweet potatoes and tonight I made "twice baked stuffed sweet potatoes" stuffed with mashed sweet potatoes, sour cream, cinnamon, salt, pepper, ginger and topped with a dab of butter and drizzled with a cinnamon honey stick....soooo good...if you like sweet potatoes, you will LOVE this!

DAY 33 CHALLENGE

I am out of plantain chips again......I think I need to make my own again.....may last a bit longer!

I have really come to enjoy fresh mangos too....they are so delicious and juicy and fun to eat.....whole family love them too, we are out of those too.....having a family of 5, all with mouths and stomachs has it's challenges ;)

Had granola, crumpets, plantain chips, and fresh fruit this weekend. 

Had some stuffed peppers and sweet potatoes as well.  Fresh produce ALWAYS tastes so much better!

Coming down to the wire....almost there....can't wait for Easter Sunday so I can enjoy a BIG bowl of jelly beans and maybe a poptart ;)

DAY 30 CHALLENGE

OK.....Plantain chips...check, Granola.....check.....Whole grain crumpets......check....ok, I'm good, was getting a little nervous there ;)

I picked up some "all natural" granola "cereal" from Sunflower Market today....only 5 ingredients, or maybe less, cinnamon raisin flavor, low in fat and HIGH in flavor....it's so good, I think it might be better than mine and on sale in the bins for 1.99 per lb.....check!  I know what's for breakfast tomorrow :)

I am starting to really be a fan of whole grain crumpets from Trader Joes too spread with all natural peanut butter and all natural fig jam.....yum!  If you like regular crumpets, you will LOVE these.....has a nutty flavor to it!

You know, I have to say that white flour really is lacking in flavor to all the other flours out there....whole wheat flour, brown rice flour, corn flour, chickpea flour.....All these flours have so much more flavor and are so much better for you, why didn't I realize this before......because I never challenged myself before....I'm so glad I did.....I will NOT go back!....very affordable too!

For dinner, the whole family had fried brown rice lettuce cups using butter lettuce.  I love this lettuce because the leaves are perfect "cups" and they are the "skinniest" lettuce in the markets at 7 calories per cup....so delicious....I added chinese five spice, ginger, and low sodium all natural soy sauce, and of course eggs to the cooked brown rice.....which I cooked in the rice cooker with water, homemade chicken stock, and a splash of sesame oil......YOU GOTTA TRY IT!

DAY 28 CHALLENGE

Ok.....I am out of plantain and sweet potato chips, granola, and muffins....have seriously got to get to the store and in the kitchen!

Tried the "brown rice" krispies this morning and while they weren't completely tasteless, they definitely lacked in flavor than "white rice" krispies, however, they do have a nutty flavor to them that I did enjoy....I felt like I wanted to add a lot of sugar to the cereal which really would defeat my whole challenge.  I think I will stick to my granola and use these krispies to add to my granola or make a healthier version of rice krispy treats (maybe I'll try that for an easter treat)

I really like the Nature's Path oatmeal packets.  They are all natural with a mimimum amount of ingredients that I can identify, taste great, and are filling! Add some jumbo raisins and a splash of coconut milk and that is one DELICIOUS and SATISFYING breakfast!

I'm thinking of trying to make some "whole" desserts but haven't come up with anything yet.....any suggestions?

DAY 27 CHALLENGE

27 days and counting.....

Completely out of Irish Soda muffins and running very low on my granola cereal....I will probably be in the kitchen a lot this week!

Got some more Jumbo Golden Raisins at Sprouts today....Love those things!

I love shopping in the "bin" sections at Sprouts, Sunflower, and Whole Foods.  It is so much cheaper and you can get as much or as little as you like, you don't have to depend on manufacturers telling you how much you need to buy.

Made "Fajita Nachos" tonight using whole grain tortilla chips....they hold their shape and retain their crispiness way better than regular tortilla chips.  Not a drop left....family loved them.....Nugget Market has their "free range" chicken on sale again this week for 99cents a pound....all out now, need to stock up again.  Maybe chicken enchiladas with whole wheat tortillas later this week.

Got some "brown rice" rice krispies today at Sprouts.....going to try some for breakfast tomorrow, let you know if I will be investing in more or sticking to granola....until tomorrow....

DAY 24 CHALLENGE

This seems like the longest Lent ever!
I'm exaggerating, it's really not bad at all....just being told what you CAN and CAN'T eat is always difficult for me.  If I can't have it, then I want it even more where I probably never thought about it before.

Today was a good day though.....

Had my homemade granola cereal with JUMBO raisin medley (I am just so in love with these monstrous little fruits) and coffee with coconut milk

Had a grilled brie sandwich on 100% whole wheat bread spread with a little date jam and carmelized onions.....DELICIOUS.....another hit recipe!

Snacked on my homemade granola bits ALL DAY it seems like....I just made a batch yesterday and I feel like it will be gone by tomorrow!

Made homemade curtido (a salvadorean cabbage salad made with olive oil, vinegar, oregano, raw sugar, salt, pepper, and, for my twist,  I added a little sour cream and topped with Feta Cheese
It is usually served cold but I sauteed it for a warmer flavor on this cold night
I served it alongside brie and grilled pineapple quesadillas on whole wheat tortillas.....such a great flavor combination!

I trully am enjoying my experimentations and Leo (believe it or not) is becoming a fan too!

DAY 23 CHALLENGE

I am getting closer and closer....I can feel it.....  ;)

It is definitely hard when I am out shopping and I see all the festive and yummy Easter candy and treats that I can't have right now.  I probably wouldn't have even really noticed them as much as I do now had it not been for this challenge but it's all right, I'll have plenty for Easter Sunday....you know I'll be raiding the kids Easter baskets and candy filled eggs  ;)

I have made at least 3 batches of granola and I change up my "add ins" everytime and each batch gets better and better!  Today, I added jumbo raisin medley, coconut, peanuts, and dried banana and instead of cinnamon, I used apple pie and pumpkin pie spice.....so much more flavor!  I am all out of whole wheat and brown rice flour....need to pick some more up at Whole Foods tomorrow when I am there for their Friday Sale and I have coupons on top of that!

I had a delicious baked sweet potato today topped with real butter, cinnamon, a little salt and pepper, fresh coconut that I shaved, and a drizzle of agave syrup.....may never go back to russet potatoes again.  Sweet potatoes are better for you and in my opionion have WAY more flavor.

DAY 21 CHALLENGE

Another day gone by......another successful day I should say!

I need to make more Irish Soda Bread muffins....I'm going to run out before St. Patrick's Day gets here....gotta have Irish Soda Bread on St. Patrick's Day ;)

I had a delicious lunch today of grilled brie with sauteed apples on whole wheat french bread from Trader Joes....only had 2 slices left.....wanted another....soo good....the sauteed apples along with the creaminess of the brie was so delciously hot between the 2 pieces of bread....plantain chips made the meal complete!

I had the BEST dinner I have had so far tonight......every once in a while, we have "pizza night" where we make our own pizzas.  I buy pizza dough and divide it into fifths (there are 5 of us in our family), and we each make our own personalized pizza.  This time I bought whole wheat dough from Trader Joes (I have always loved this store but even more so now....so much I can eat at very affordable prices!) and I used my homemade pesto sauce (recipe in previous blogs) brie and feta cheese, sprayed with a little olive oil spray and baked for 15 minutes.....I served homemade coleslaw salad along with it which I topped my pizza with and was ABSOLUTELY DELICIOUS and guilt free along with being a "whole" meal.....the dough has a good, nutty flavor and not dry like some wheat doughs can be......the best part.....the whole round of dough that served all of us was only $1.29.....a "fru-gal" and "whole" meal.....who knew?  :)

DAY 20 CHALLENGE

I have reached the halfway mark....yeah!

I have to be honest, it is getting a bit more difficult but I am staying on task and being true to the challenge!

I really need to find something else to drink besides mineral water.....I need a different taste in my mouth. 

On the positive side, I am always pretty satisfied....not too hungry at all which I thought would be the challenge here but I have found a lot of different products that I actually really like!

I have not had any soda, candy, or poptarts since I started which I'm sure has done wonders for my body!  I LOVE feeling so healthy and "whole"!

This will definitely be a new way of life for me....I feel cleansed :)

I am eating a lot more fresh fruits and vegetables and am always excited to see what new product at the Farmers Market there is to try.

Dinner tonight was chicken thighs baked in a homemade red wine broth with onions and apples alongside steamed brown rice with a hint of cinnamon....I ate A LOT however decided to go for a run right after.
Note to self: wait at least an hour after eating a big meal to go for a run....will save you heartburn and nausea in the long run  ;)
Gotta go, chicken bones are waiting for me to make more homemade chicken stock.....the 1st batch is all gone....

DAY 18/19 CHALLENGE

Another weekend for this challenge....so far so good!

need to buy stock in coconut milk.....DELICIOUS in coffee.....need to buy AGAIN....am almost out!

It really pays to read ingredients and see what you are actually putting into your body....kinda scary!
No more soda in our house, everyone is doing just fine without it!

Am really finding A LOT of things that I thought were highly processed are in fact, not, who knew?

Sweet potato and plantain chips from Trader Joes and Whole Foods have become a staple in our house....the kids are eating them faster than I can refill the container....ugh......it's a good thing though...right?  I may have to buy a few bags and hide a stash for JUST ME!

Can someone please make an all natural, no processed jelly bean though.....think about it!

Not sure what's for dinner tonight but I'm sure my creativity will shine!

Amanda made soup using chicken stock I homemade and came out so delicious......just proves that homemade WINS every time.....until next week....almost halfway through!

DAY 16 CHALLENGE

I am on day 16 and it feels like I have been doing this forever....in a good way though!

I am feeling so accomplished and proud for making my own food.  The best thing about making your own food is that you control the quality of ingredients and how much of "anything", whether it be fat, sodium, sugar, etc..., you put into your product.  You KNOW EXACTLY what's in there and should feel much better about eating it and giving it your family...I know I do!

As I write this, I am making my own chicken stock with leftover "all natural/free range" chicken bones from tonights dinner.  The chicken was very affordable too....I got a tray of 8 chicken legs for $2.35 at Nugget Markets along with a tray of 8 chicken thighs for also $2.35!

I still struggle at certain places when going out to eat (which I actually rarely do).  The oatmeal at McDonalds is actually pretty good but I felt cheated with the fruit and walnut salad today.  Not the same as a cheeseburger and fries....I just need to stay away from that place anyway!

DAY 14 CHALLENGE

2 weeks down.....not bad at all!

Definitely finding more things in the grocery store that I can have and definitely making A LOT more things homemade with whole/natural ingredients.

Today I made:

-roasted veggie salsa that I ate with my favorite whole grain tortilla chips....will NEVER buy Pace again ;)

-whole wheat corn cakes and pureed pumpkin soup......The corn cakes were DELICIOUS, even better than when making with white flour....time to switch.....
I have to admit though, that the pumpkin soup was not a favorite and will probably have to tweak the recipe to make it better.

-This is part of the process though, trial and error....I DEFINITELY have had more successes than failures for sure!

DAY 13 CHALLENGE

Things are still looking good.....liking the extra energy at night!

What I have come to really notice is that splenda is WAY more sweet than sugar and noticing my food/coffee isn't as sweet as I am used to but it's all about getting used to it again.

I made lasagna with "spelt" noodles tonight for dinner with homemade tomato sauce.  Actually, pretty good and really loving the fresh herbs that I am using more of now.....I LOVE basil, cilantro, and my rosemary bush is getting a lot more use now than ever before.  We don't have a drop left of the lasagna....my youngest son, Alec and husband, Leo  had 2 servings and Leo also cleaned off everyone else's plate too.  They didn't realize they would be doing this challenge with me....haha....

DAY 11/12 CHALLENGE

Another successful weekend accomplished!

I found a new product that I LOVE....whole grain crumpets at Trader Joes.  If you like regular crumpets...you will like these.  They are non fat and have only 90 calories per crumpet....I have 2 for breakfast and spread a little "real" butter or all natural peanut butter on it after toasting....so delicious!  Pretty affordable too at only 1.99 per bag (8 in a bag)

I have found a great place to have lunch at too....Whole Foods Market....it's not just for groceries.  They have an abundant salad bar with so many "whole food" options and prepackaged items also that are more affordable than the salad bar.  The corn salsa salad and whole grain salad with veggies and dressed with a little olive oil and vinegar is so yummy with a whole grain roll.  I decided to wash it down with some coconut water (never had before) and decided it was too sweet for my taste but mixed it with sparkling mineral water and was just fine.

Going to dinner was a little rougher this weekend.  We went to Round Table and I ordered the salad bar.....I dressed my salad with olive oil and vinegar and added bell peppers and fruit on the side but the smell of pepperoni and cheese was almost too much to resist but resist I did and am very proud of myself!

For dinner tonight, I made homemade corn tamales using only corn, corn meal, butter, and a little brown rice flour........Leo and I loved them and definitely am going to continue making them this way....our kids have never been a fan of tamales and still aren't....that's ok though, 2 out of 5 aint bad....all in all, a very succesful weekend.....the weight I lost has returned, I think it was from the detoxing my body was doing, now I'm all detoxed and back to normal......until tomorrow....

DAY 10 CHALLENGE

1 more month to go but who's counting.....honestly, I could probably do this for a lot longer and I just might!

Went to Whole Foods Friday Sale and was very impressed with their prices.....pretty affordable....will have to again next payday!

I feel so good, not so tired at night, and love how healthy my body is feeling and mind knowing all the good nutrition that is going into my body!

Made homemade granola bars today that were AMAZING.....better than any packaged bar I've had.....another packaged product that I won't buy anymore

ROUGHLY CUT INTO BARS
Am going out to a pizza place this weekend for dinner so hopefully they have a good salad bar....I will keep you all posted......I think it's time for some homemade granola bars....until tomorrow...

Here's the recipe for the granola bars:
-1 cup whole wheat flour
-1/2 cup brown rice flour
-1/4 brown sugar
-1/4 agave nectar
-1/2 cup rolled oats
-1/2 cup real butter
-1 egg
-1 cup total of any dried fruit, any nuts, coconut, and pure dark chocolate shavings

MIX EVERYTHING TOGETHER, SPREAD OUT EVENLY ON BAKING SHEET AND

DAY 9 CHALLENGE

I am running out of the food that I have come to really enjoy....time to head out to Sunflower or probably Whole Foods tomorrow for their Friday Sale

I really love the Jumbo mixed raisins.....such a great snack and a wonderful addition to my homemade granola

Ran out of muffins this morning so I whipped up a different batch this time: whole grain Irish Soda muffins in honor of upcoming St. Patrick's Day using the Jumbo raisins, whole wheat and brown rice flour, nonfat buttermilk and a splash of coconut milk....can't wait for breakfast tomorrow!

Loving the homemade guacamole....almost out, family loves it too along with the whole grain tortilla chips....never will by packaged stuff again!

My entire family is eating  A LOT more fresh fruits and vegetables since it's readily available in our house and I really think we could get used to living without soda....even me!

I have also come to really enjoy the coconut milk in my coffee.....the 1st week I really missed my flavored coffeemate creamer but now really looking forward to the nutty taste in my coffee every morning....is it bedtime yet?

I am missing my Easter jelly beans and cadbury mini eggs that I enjoy this time of year but I can tolerate it....will just stock up on the clearance sales after Easter ;)

DAY 8 CHALLENGE

1st week down, on to the 2nd week....

Homemade granola was FABULOUS this morning!

Trail mix is a pretty filling snack for in between meals....I love adding the jumbo golden raisins to mine....so delicious...I actually look forward to them everyday!

I am almost out of my homemade muffins, need to make some more.....kids are even eating them....they may just join this challenge with me (ok, a little too much wishful thinking)

Made homemade guacamole tonight and added feta cheese, lime juice to add flavor but also to prevent browning and I also added a little pumelo juice (slightly sweeter than a grapefruit....not as tart)....sound weird but added a hint of additional flavor....for my dippers, I used whole grain tortilla chips with all natural ingredients....I actually like them better than regular tortilla chips, these particular ones have sesame and flax seeds in them with give them a boost of flavor....may have to stick with these.....(FOOD SHOULD TASTE GOOD is the brand name)

Another product I love is FLATTENED BANANA from Trader Joes.....it's basically dried banana.....the only ingredient is: BANANA....so yummy!

HOMEMADE GUACAMOLE, WHOLE GRAIN TORTILLA CHIPS AND SOME RED WINE.....I can do this!
I feel great and am sleeping better therefore not as tired......until tomorrow......

DAY 7 CHALLENGE

I made it through the first week with no slip ups.....woohoo!

Still feeling good but I have to say, it is starting to become a challenge on what I drink.  I am drinking a lot of mineral water, unsweetened ice tea, hot tea, and coffee, and the occasional wine with dinner but I am starting to need a different taste in my mouth...I am open to suggestions if anyone has any  :)

Made some homemade granola today using ALL natural ingredients at a very low cost.....don't think I will ever by the boxed stuff again, mine is WAY more tasty!

Am loving my all natural peanut butter (just ground peanuts....that's it...no other ingredients) and all natural fruit sweetened jam on 100% whole wheat bread for my lunch......it's fun to be a kid again and eat a healthier version of PB&J  :)

made some air popped popcorn and seasoned with olive oil, a little salt, pepper, and a dash of cinnamon....sounds weird but actually pretty tasty......not nearly as fatty, greasy, and delicious as movie theater popcorn but it was a satisfying afternoon snack

Am loving all the fresh veggies I've been sauteeing with a little olive oil, salt, and pepper.....when you eat fresh, it's hard to go back to packaged stuff.....a lot more affordable when in season and at Farmer's Markets......Sunflower and Sprouts Markets are becoming good friends of mine too....very reasonable prices on the products I am buying.

Homemade granola with cranberries......only cost less than 4.00 to make an entire batch which is probably about 10-12 servings!
1 week down....6 more to go.....until tomorrow.....need to go find something I can drink  ;)

DAY 6 CHALLENGE

Well, I made it through the weekend and all is still well...phew!
We are on Day 6....just 34 more to go!

I am good....not as tired as I normally am at night, my body temperature seems to be changing...I am not as cold as I normally am which is a very nice surprise for me...don't have to always be bundled up.

This challenge has forced me to look at ingredient labels and it amazes me how processed so many things are and how not as processed some things are that I thought would be....very enlightening!

I've been experiencing with recipes and am very pleased with the plantain chips I made today....I sliced plantains, sprayed with a little olive oil and baked at 400 for 20 minutes flipping over halfway through.  They were so delicious and so much more affordable to make.....made chips out of 3 plantains for 99cents!

Still loving my granola and fruit for breakfast and had a brussel sprout salad for dinner similar to my coleslaw in previous blog.

I am hardly hungry due to all the filling fiber I am getting but I have to be honest and say that I did lose a little bit of weight due to a lot of running and not enough calories....I know now that I need to increase my calorie intake with maybe more nuts and cheese and dried fruit .

Still trying to figure this out but enjoying myself in the process.....I just may continue this (on not so strict a scale) after my challenge is done.

DAY 4/5 CHALLENGE

First weekend of the challenge and was WAY better than I thought it would be!

I am really looking forward to my morning granola every day.....pretty tasty and filling!

Unsweetened Dried Mangos from Trader Joes are delicious and only 1.99 per bag....have to go get some more when done...could munch on those all day!

All natural peanut butter on wheat bread have become delicious and filling lunches as well especially spread with all natural, fruit sweetened jam from Whole Foods.

I am totally out of Plantain Chips (my family decided they loved them too)...need to get more at Trader Joes for only 1.69 per bag and hide them from everyone else!

Went out to dinner last night and we hit "Home Town Buffet" because I knew I could raid the salad bar and not starve.  I thought I would only be able to get lettuce and veggies with no dressing but as it turns out, they have a spice station with a big variety of oils and vinegars that went nicely with my lettuce and veggies.  I was also able to fill up on fruit and hard boiled eggs and there was a very nice variety to choose from....wasn't able to get dessert  ;( so finished the meal off with a nice cup of hot tea....left feeling very satisfied!

We went to the movies after that and was almost going through withdrawals from smelling the buttery scent of popcorn (which in my opinion is a MUST if you are going to the movies) but was good, skipped the popcorn and enjoyed the movie empty-handed.

MY TREAT IS THE ONE ON THE RIGHT ;)
I have to say, one of the best things so far about this challenge is how healthy your body becomes getting rid of all those extra toxins in your body and how regular you become.....what a welcomed surprise!.....more tomorrow.....going to watch the Oscars and munch on all natural air popped popcorn while watching flavored with a little salt and REAL BUTTER!

DAY 3 WHOLE FOOD CHALLENGE

So far still so good!
Loving my homemade granola with fruit for breakfast everyday and homemade muffins for snacks.

For lunch, I made a coleslaw salad with red onions and my salad dressing from last night.....ABSOLUTELY DELICIOUS....I would eat it even if I wasn't on this challenge!

I do have to get creatvie when I go out to eat though....that is my challenge....still working on that.

I need to take in more calories I think and eat more nuts along with my dried fruit.....lacking a little energy on my run today....

It's a work in progress and I am up for this challenge.....more tomorrow!

FRU-GAL'S DEAL OF THE DAY

My shopping adventure only cost me 13.86 today for all this ( a dry fit basketball shirt, good running socks, kids tie, christmas ornaments, and a pair of black pants for me)....the socks alone costs 10.00 but when you shop only clearance racks and pair that with a coupon.....you spend as little as I do!

DAY 2 OF CHALLENGE

It's day 2 and so far so good!
My coffee doesn't taste as good without my coffeemate creamers but sweetening it with cinnamon or ginger is a nice substitute with lite coconut milk which is just milk from the coconut mixed with water.

lunch may get a little monotonous so I will have to start getting creative.

My muffins have been a treat I look forward to everyday and bananas never tasted so good.

I am missing my diet soda I have to say but mineral water isn't nearly as bad as I thought it would be.

For dinner tonight, I made homemade tomato sauce with green bell peppers to top my whole wheat spaghetti  and homemade salad dressing using fresh rosemary and garlic for my salad.....I really wanted a piece of sourdough bread but resisted and had fresh cucumber and grape tomatoes instead.....actually a pretty filling meal.....till tomorrow....

REAL FOOD CHALLENGE

Well, it is that time of year again.....LENT....which means, what am I going to sacrifice this year in honor of the season?  Well, in the past, I've given up meat completely, desserts, not eating after dinner......so this year I thought I would do something a little more challenging:  GIVE UP JUNK AND PROCESSED FOOD AND DRINKS!
Today being Ash Wednesday is the 1st day of Lent and my 1st day of my Real Food Challenge:
I through out all soda, candy, chocolate and stocked up on lots of fruits, veggies, nuts, and REAL food that I can actually understand what the ingredients are!
I actually feel good, had great energy on my run this morning and surprisingly did not feel hungry all day. 
I have made whole wheat, all natural mixed berry muffins which even my kids like, plantain chips that are just sliced plantains with salt and oil baked (DELICIOUS),all natural ground peanut butter on 100%whole wheat bread for lunch and brown rice/veggie stuffed peppers for dinner which were actually pretty filling!

Well,  that was Day1, follow me tomorrow for Day 2....I am missing my diet soda though ;{  but sparkling mineral water is actually pretty tasty!

FUN VALENTINES DAY DESSERT

Here is a fun and easy Valentine's Day dessert your kids, especially, will love!
It involves most kids favorite sugary treat: TWINKIES

Here is what you do, so simple, you'll wonder why you haven't done this before:

-Take a twinkie and cut it in half diagonally
-Flip one of the pieces over so bottom is facing up and put together with other piece top facing up to resemble a heart
-Top with whipped cream and a cherry

NOW WHO'S NOT GOING TO LOVE THAT......EVEN YOUR HUSBAND WILL IF HE'S ANYTHING LIKE MINE....He once ate an entire box of Twinkies in one sitting...He LOVES this!

FUN VALENTINE'S DAY BREAKFAST RECIPE

Use an edible pen/food writer for personal notes like these!
I love all holidays and always try to come up with holiday inspired recipes for my family.  This one is one of our favorites and my family has relied on me to make this every Valentine's Day for breakfast.

PINK AND WHITE HEART PANCAKES:

you will need:
-pancake mix
-water (follow directions on box)
-red food coloring
-heart shaped cookie cutter

-Prepare pancake mix according to package directions (make enough for however many in your family)
-Divide batter in half and put a few drops of red food coloring in one (should come out to a pink color)
-Make both batches of pancakes....some will be white and some will be pink
-when cooled, take a white pancake and cut out a heart shape in the middle of pancake using cookie cutter....put aside.....take a pink pancake and do the same thing
-take white heart and place in middle of pink pancake and take pink heart and place in middle of white pancake to make two-toned pink and white pancakes.....continue with remaining pancakes

-Write personal messages to your family members with edible food writer.

THIS IS SUCH A FUN TRADITION THAT WE HAVE COME TO LOOK FORWARD TO EVERY YEAR....HOPEFULLY, IT WILL BE YOURS TOO!

'REAL FOOD" WHOLE WHEAT MUFFINS

My family and I are Catholic and every year during Lent we each pick something to give up or "sacrifice" along with not eating meat on Fridays.  In the past, I have given up eating dessert, eating anything after dinner, eating meat altogether but this year, I decided to up the game and push myself a little harder.  I am giving up all processed and packaged food and essentially only eating "whole" or "real" food.  I have heard a lot of great reviews from people who have done this and am excited to start!  Don't get me wrong, it is definitely going to be a challenge, especially, giving up diet soda...ugh....but I am looking forward to seeing how different my body might start to feel, how much energy I hope to have, how my skin will start getting healthier, and just feeling better because I am eliminating a lot of toxins from my diet. 
I am going to start blogging and tracking my progress and probably challenges come Ash Wednesday, Feb. 22nd, 2 weeks from today!
each muffin has different fillings

you can customize each muffin so you have something different each day.....I LOVE that!
I have to get creative as to what I eat so I found this muffin recipe which I can eat for some of my breakfasts.  I had my kids and their friends try it, and they actually really liked it and so did I, try it and let me know what you think!

WHOLE WHEAT MUFFINS:
-1 1/2 cups whole wheat flour
-3/4 cups unsweetened apple juice
-1 tsp pure vanilla extract (or any flavor....orange extract would be good in here)
-2 tbsp honey
-2 eggs
-1/8 tsp each nutmeg, cinnamon, ginger
-1/4 cup oil or (1/8 cup unsweetened applesauce and 1/8 cup coconut or olive oil)

-Mix all dry ingredients together, then add wet ingredients and mix until combined
-fill 12 muffin tins or what I did (6 jumbo muffin tins) with batter
-add any "whole or real" toppings you like to each tin and then gently stir to combine
Here are some examples:
-orange/lemon peel
-dried fruit
-nuts
-berries
-all natural jam
-all natural peanut butter

Bake at 400degrees for 15 minutes for 12 muffins or 20-25 minutes for 6 muffins

FRU-GAL RECIPE

My favorite cake to have on my birthday or anyone else's birthday for that matter is:  CARROT CAKE!  It is so delicious with all it's sweetness and warm spices especially studded with raisins but I hate to think about all the FAT and CALORIES in that wonderfully, yummy and creamy CREAM CHEESE FROSTING.  So, here is my version of a "liter" more figure and budget  friendly "fru-gal"  alternative:

LEAN CARROT CAKE MUFFINS

WHAT YOU WILL NEED:

-1 box carrot cake mix…on sale for 1.00 at grocery stores

-3/4 cup egg beaters….on sale for 2.00 at grocery stores

-1/2 cup applesauce….on sale for 1.00 per jar at grocery or dollar tree stores

-water needed per cake box directions

-1 cup raisins…1.99 per box…won’t use all of it

FROSTING INDREDIENTS:

-1 container of  marshmallow fluff…on sale for 1.00 at grocery stores

-1/2 container  fat free cream cheese…on sale for 1.99 at grocery stores

RECIPE DIRECTIONS:

-make cake mix according to package directions replacing the oil with the applesauce, egg beaters for eggs, and adding the raisins

-spray 2 jumbo sized 6 count muffin tins with nonstick spray and fill both trays with batter, bake per package directions for cupcakes

-meanwhile, mix marshmallow fluff with cream cheese with hand mixer, if available, until well blended….set aside

-let muffins cool

-spread 1-2 tbsp frosting mixture over each muffin, depending on how much you like, and enjoy!

MAKES 12 MUFFINS FOR LESS THAN 6.00….LESS THAN 50 CENTS PER MUFFIN

fru-gal: FRU-GAL'S TIP OF THE DAY: I am a stay at home mom, as most of you know, and I usually have the time to clean but I absolutely HATE to do it but I don't want my house ...

FRU-GAL'S TIP OF THE DAY

I am a stay at home mom, as most of you know, and I usually have the time to clean but I absolutely HATE to do it but I don't want my house to suffer for it....what to do??

So. I came up with a solution......clean 1 thing every day but do it well!   That way, you don't get overwhelmed and when you finish cleaning that daily room, you are done for the day!  Here is my system:

MONDAY: Vaccuum all rooms downstairs and break out the hose and vaccuum in the corners and the bathrooms.  My children are in charge of the upstairs and vaccuum that every weekend (you'll love it when yours get old enough, if they aren't yet already.....I'm talking as young as 6 can start pushing that vaccuum)

TUESDAY: clean all bathrooms downstairs (I have 2)...wipe all counters and mirrors, clean toilets, wipe down showers and tubs, and wipe down floors as well.
My children have their own bathroom upstairs and they divide up the chores and also clean it every weekend

WEDNESDAY: dust everything (including upstairs....kids do an ok job but I like perfection and have more time on Wednesdays to do this)....wipe down walls if there are smudge marks....if you have kids, you have smudge marks   :{

THURSDAY:  Thursdays are our garbage nights, so I chose this day to clean the kitchen.  I clean out the fridge and toss out anything that is expiring or has lived out it's life ;}, wipe down all counters, empty toaster crumbs, clean sink (we have a stainless steel sink and needs a special cleaner for this), mop floor

FRIDAY:  Vaccuum again ( I have a dog, 3 kids, and a husband), must vaccuum again!

What I do on a daily basis is wipe down my kitchen every night after dinner, sweep up the kitchen floor, and wipe down my countertop in my bathroom.

This daily system works for me and SAVES me time for other things I enjoy doing (like writing in this blog), reading, scrapbooking, running, oh yeah, and taking care of my family ;)

Try it this way or choose different things on different days that work for you

FRU-GAL TIP OF THE DAY

Here is my tip of the day:
Save all those big snack containers that you get at Costco....you know the ones that have the Pub Mix, or pretzels, or granola, etc......when you finish with what came inside.  Wash out and save for future use.  I use mine for cereal (I take them out of the box and put into canisters....more appealing and gets rid of those boxes......and when you purchase from amazon in bulk like I do, you can combine more than 1 box into 1 big container and save space in your pantry), chex mix that come in big bags, dried fruit, and anything I purchase from bins at the grocery store.....(rice, pasta, oats...etc.).

This will save you from spending money on extra tupperware containers!
